This delicious Keto Instant Pot Italian Beef is perfect for a low-carb meal, filled with tender beef and tangy pepperoncinis.

- 3 1/2 pounds boneless beef chuck
- 4 tablespoons butter use pork fat for paleo
- 1 large sweet onion peeled and sliced
- 6 cloves garlic peeled and minced
- 15-20 pepperoncini peppers
- 1/2 cup pepperoncini juices
- 1/4 cup Worcestershire sauce low-carb version
- 1 cup beef broth
- 2 tablespoons keto-friendly sweetener monk fruit
- 2 tablespoons dried Italian seasoning
- 1 tsp salt

- Set your Instant Pot to Sauté mode. Melt the butter in the pot, then add the sweet onion and minced garlic. Sauté for 3-5 minutes, stirring occasionally, until the onions are fragrant and slightly softened.
- Once the onions are soft, nestle the beef roast into the bottom of the pot (You may need to cut into large chunks if roast is too big.
- Add the pepperoncinis, pepper juice, Worcestershire sauce, beef broth, keto-friendly sweetener, Italian seasoning, and salt, over the beef. Stir gently to mix the seasonings and liquids.
- Secure the Instant Pot lid and ensure the valve is set to sealing. Choose the Pressure Cook High setting and set the timer for 60 minutes.
- Once cooking is complete, allow a Quick Release of pressure by switching the valve. When the pressure has released, carefully remove the lid.
- Using tongs or two forks, shred the beef into the flavorful juices in the pot. Give it a quick stir to fully combine. Taste and adjust the seasoning with additional salt or pepper if needed.
